How do you adjust the position of the Kayak while fishing?  It keeps moving with the tide or wind. Is there any easy way to do it? Maybe sea anchor or something?

A rudder will get you closest to the control you seek.  We're at the mercy of the drift so working from there will be more productive. The sea anchor will give you a feel for how your particular kayak model wants to drift.  Current effects that and you'll get it down after some time OTW.
